Banana Bread ::



I made this banana bread yesterday and it was absolutely delicious. I always undercook it a little so that it's extra moist in the middle, but this recipe will already make very moist bread. It's simple and straightforward. You can add nuts (or anything, really) if you want, but I like mine without them.

2 cups granulated sugar
1 cup butter, softened
6 very ripe bananas, mashed (about 3 cups)
4 eggs, beaten
2 1/2 cups cake flour
2 teaspoons baking soda
1 teaspoon salt

Cream the butter and sugar together until light and fluffy. Add mashed bananas and eggs, mix thoroughly.
Sift dry ingredients together and blend with banana mixture. Be careful to not over mix the batter.
Pour into 2 greased loaf pans and bake at 350 degrees for 45 minutes to 1 hour.
